NEW! Super Reds and Greens Energy Bar Give-away!!!!!!!!

Driving home from a long day on Anzac Day hubby told me he might need to pull over to grab an ‘energy drink’ as he was feeling quite snoozy (which is not a good thing whilst driving!) …. can you imagine my instant ‘cringe’ !!?? …. whilst I understand he was exhausted just the thought of him putting all that CRAP into his reasonably healthy body didn’t sit well with me …. a huge YAY though as guess what I had in my handbag ‘just incase’ ….. a NEW Super Reds and Greens Every Bar from Nutra Organics …. whilst I only got them last week within days of them being released, I instantly put one in my handbag, as a nutritious and tasty meal replacement, its a must have for your handbag of briefcase!

Hubby devoured the bar and was pleasantly surprised that within 10 minutes or so he felt great and not tired …. me, well I was not so surprised as I know Darlsey and Vanessa, the owners and creators of these bars, and I wouldn’t expect anything less from them and their staff! If they say this bar is full of goodness, tasty, healthy and you will love it…then I know I will!!!!! AND they are Gluten, Dairy, Soy, Egg and Nut Free!!!!!!!

In my handbag...my first ever 'blog party'...

Good Afternoon! I hope this finds you all well! I am incredibly excited to have been invited to be a part of a ‘blog party’ …. my first ever …. this was started by the ever amazing Sonia from Natural New Age Mum and the ‘theme’ is “Whats in your handbag” …. I was a little hesitant to be honest as I feel a handbag can show “the real you” and there was a twinge of fear after being judged for having 3 pieces of fruit in my kids lunch boxes then ‘what on earth’ will people say with my REAL handbag….but you know what though…this is ME…warts and all….(ok so NO I don’t have warts but you get my point!)….so here goes….

IMG_9254This is my cute little Tommy Hilfiger handbag that my hubby bought me back from The States last year. The way to a mans heart is through food, the way to my heart (well one of them!) is handbags…they don’t have to be brands, its about style and colour, hubby got it right with this one…he is a keeper ;-)

Inside my handbag: My wallet that is generally over flowling with work receipts until I can’t close it and have to file them away! Its a $15 wallet from a handbag chain store and I love it! My Maui Jim Sunnies…this is the second pair I have owned and wouldn’t wear anything else, I am quite sensitive to the sunlight with my eyes and these for me are perfect. My ‘mini’ makeup bag which contains Adorn Lipgloss in Nude, Adorn Foundation, Organic Tampons, a hair elastic, a bobby pin or 2 and a mirror….oh and keys, house and car only. Simple as that. See that wasn’t so scary now was it! hmmm….ok I need to be honest, whilst YES this is my handbag, this is my “I am ducking to the shops to get milk” handbag….or my “I am an adult” handbag…..

This is my ‘Colette’ handbag (if only it had another L it would really be mine!) I love it, its massive and soft and ‘comfy’ ….This is known as my “Mum” handbag….or my “just in case” handbag….or my “I need to see a Chiro after carrying this” handbag…..

OK here goes….

As mentioned above, my wallet, sunnies, makeup bag and keys…. normally 3 water bottle also…

* Nappies, wipes and nappy bags … Just in case…. I have 2 year old twins….say no more (NO I don’t use cloth, I tried it with my first daughter for 3 months and it wasn’t for me, there was no way I would do it with twins)

* Chemical Maze book

* Additive Free Pantry Guide

* COTC Calico bag …. Just incase I need a bag … saves on plastic bags when I can

* Clear Envelope for work things – it has some brochures & business cards

* Gucci Multi-focals – just incase I need to see better … ha ha! I need these if we go to the movies or if I am reading for extended periods of time.

* My favourite Perfume “Jean Paul Gaultier” I have been wearing this since our Honeymoon almost 15 years ago….I have never found a scent I love as much

*  2 Superfoods for Kidz bars – just incase we are stuck without food or if the twins need to sit still for ’10 more minutes’

* Yummy Earth lolly drops ….yep scattered loosely all through my handbag …. just because I love them

* 2 pens – just incase

* Endota Spa Organic Muscle Magic – this is my first option for hormonal or tired headaches – rubbed into my temples and neck is amazing

* Nurofen plus – just incase … I haven’t used this in a long time, but don’t like to leave without it (for fear of having a food intolerance attack and needing it)

* PS Calm – after suffering PND and anxiety attacks I like to keep this with me at all times (yep you guessed it)…just incase….it is a natural relaxer which once again I haven’t taken since last November, but its my security blanket to have it there

* Anti-bacterial hand gel – just incase I am changing bottoms and there is no sink around to wash my hands…I know there is a lot of talk about how bad hand sanitizer is but I would rather use this than nothing!

*  Snack Pocket – this holds my Rooibus tea bags incase I am somewhere wanting a cuppa and they can’t cater for me…I can always get hot water! These cute little bags are from 4myearth and I am hoping I will soon be a stockist for them

* a spoon – never know when you might need one!

* Random things: a toy whistle, a toy car, a banana in pyjama figurine, a hair bow and Miss 2′s sunglasses  - even more proof that I am a Mum!

* Endota Spa Organic Muscle Magic – this is my first option for hormonal or tired headaches – rubbed into my temples and neck is amazing

* Nurofen plus – just incase … I haven’t used this in a long time, but don’t like to leave without it (for fear of having a food intolerance attack and needing it)

* PS Calm – after suffering PND and anxiety attacks I like to keep this with me at all times (yep you guessed it)…just incase….it is a natural relaxer which once again I haven’t taken since last November, but its my security blanket to have it there

* Anti-bacterial hand gel – just incase I am changing bottoms and there is no sink around to wash my hands…I know there is a lot of talk about how bad hand sanitizer is but I would rather use this than nothing!

*  Snack Pocket – this holds my Rooibus tea bags incase I am somewhere wanting a cuppa and they can’t cater for me…I can always get hot water! These cute little bags are from 4myearth and I am hoping I will soon be a stockist for them

* a spoon – never know when you might need one!

* Random things: a toy whistle, a toy car, a banana in pyjama figurine, a hair bow and Miss 2′s sunglasses  - even more proof that I am a Mum!

Whats in my Pantry "Tea, Coffee, Drinks"

Good afternoon! I hope this finds you well! I am doing well, on the count down to see my Naturopath to get me 100% (in 2 weeks time) and in the mean time plodding along, enjoying the school holidays, getting close to finishing the photos for COTC3, cleaning eggs off the front of my house (yes our home was egged by young idiots last night) and doing up Master and Miss 2′s bedroom! (photos to come I promise…I am SO excited about it!) YAY!

Today I am sharing with you the continuing ‘series’ of whats in MY Gluten, Dairy and Preservative Free Pantry…..if you have missed any make sure you scoot back and have a browse and there are still plenty more to come over the following weeks……

“Tea, Coffee, Drinks”

The first thing I have is Coffee….not instant…not sachets…but coffee beans…I have a coffee maker and a hubby that makes me the most AMAZING coffee (on rice milk which not many people can get right!) I didn’t take a photo of the beans (as the are in the grinder container) …. we generally buy the beans from a local coffee shop where they roast them perfectly …. I LOVE my morning coffee….I normally one have one a day (sometimes but not often I have 2) and I figure with everything else I have to cut out because I am intolerant to it, coffee is not going to be cut out when I can have it and enjoy it so much! Believe it or mot coffee does have some health benefits – it is packed with nutrients and antioxidants, it may reduce the risk of cardiovascular disease and it can reduce the risk of type 2 diabetes. Is it just me or does coffee taste better in a great mug!? I have a ‘slight’ collection of coffee mugs (if I find a mug / cup I like I always buy 2)….and I have been given a few with photos on them along the way and because of this ‘addiction’ I simply had to get Cut out the Crap ones!

All 4 of my children LOVE this Berry Choc Chunk from Superfoods for Kidz. We normally have their C Berry Blast too but have just run out with another delivery due anyway. The Berry Choc Chunk is used almost daily for ‘hot chocolates’ and the C Berry Blast is mixed in with water for ‘juice’ ….if only they knew how good these drinks were for them!!!!!! Sadly I can’t have the Berry Choc Chunk listed above as I am intolerant to Berries. Excitingly though I CAN have this Drinking Chocolate from Loving Earth. The ingredients are: Organic Coconut Sugar,Organic Raw Dark Chocolate,(Organic Raw Cacao Nibs,Organic Evaporated Coconut Sugar, Organic Raw Cacao Butter, Organic Vanilla Beans, ) Organic Raw Cacao Powder, Sea Salt….and its truly delicious!

Rooibus Tea: I LOVE this tea! It is my ‘tea of choice’ …. It is a South African tea that is naturally caffeine free. You can get it organic in a box from your supermarket….you just have to look carefully as there is normally one 1-2 lines of it. Rooibus tea has many health benefits including being used to relieve stomach cramps in adults and colic in infants. I normally drink it black with the tea bag left in but if I am needing something a touch more comforting I add a splash of rice milk and 1/2 a tspn of agave syrup (or sweetener of your choice!) You should check it out if you haven’t already!

A lot of my friends drink herbal teas so I like to have a choice for them when they come over.  Ginger tea is a ‘staple’ tea in my pantry…whilst it has a bit of that ginger ‘bite’ it has many wonderful health benefits and you can always add a touch of honey….ginger is proven to be great for motion sickness, morning sickness, any ‘sick’ tummy or belly and this is the tea to help reduce your ill feeling and symptoms. Ingredients for this brand of Ginger Tea is: Certified Organic – Ginger Root (min 70%) and Lemongrass.

I love Chai Tea and whilst I often make my own, this is a great tea to have on hand. Have it black or with a touch of milk….it smells beautiful and is so very warming. Check out this gorgeous cake I made with it also ….. Chia Chai Cake ….
The ingredients for this brand of Chai Spice tea is: Certified Organic – Black Tea, Cinnamon, Clove, Cardamom, Ginger and Nutmeg.

This tea has a little twist on the standard Green Tea. Ingredients are: Certified Organic – Green Tea, Cinnamon, Clove, Cardamom, Ginger and Nutmeg. If you like herbal teas and especially Green and Chai then you will thoroughly enjoy this combo!

I went down to my Grandparents a while back and they offered me a white tea…to be honest I had never had it….Green, yes…..but ‘White’ no! I grabbed these next time I went shopping….Ingredients: White Tea Leaves. To me it is a similar taste to Green Tea…..just not as bitter, really enjoyable! Here is an interesting write up on the benefits of White Tea compared to Green Tea.

macadamia caramel meringues

Good afternoon! I hope this finds you all well….here is a recipe I created recently and couldn’t wait to share it with you! For those that want something sweet, mouthwatering and naughty but nice…this one if for you! And best of all for those of us with food allergies it is Gluten Free, Dairy Free and Preservative / Additive Free!!!!! ENJOY!!!!

macadamia caramel meringues 

SERVES 6

3 egg whites

1/3 cup coconut sugar

1 tspn orange zest

1 cup rice milk OR coconut milk

15 dates – roughly chopped

¼ tspn salt

200g macadamias – roughly chopped and toasted

36 strawberries

3 bananas

Preheat oven to 110c and line a large flat tray with baking paper.

Whisk egg whites for 1 minute, until thick.

Continue to whisk on high and gradually (1 tspn at a time) add coconut sugar and orange zest into egg whites until stiff peaks form.

Make 6 even meringue shapes onto the prepared tray and bake in preheated oven for 1 hour.

Turn oven off and leave the meringues in the oven for 1 hour.

Remove from oven and store in an airtight container until ready to use.

Place the rice milk, dates and salt into a small saucepan and bring to the boil over a high heat, stirring the entire time. Turn heat down to medium-low and simmer for 10 minutes.  Stir 2-3 times during this time.

Remove the sauce from the heat and stir through macadamias 

To serve: Place one meringue in the middle of individual serving plates and top with even amounts of macadamia caramel mixture. Decorate with strawberries and bananas and serve immediately. 

As noted you can use coconut milk OR rice milk for the sauce and use this sauce for any ‘caramel’ recipe you like….or do what my Miss 8 did and simply dip the fruit into the sauce! I hope you love it as much as we did……

What's in my Pantry "Tins"

Good Afternoon! I hope this finds you all well and that you have all had a WONDERFUL week. I am super excited as its the last day of School for my Miss 10 and Miss 8 for just over 2 weeks….I have so many things planned to do with them….I can’t wait, I love spending more time with them and not having to rush them off to school every morning! 

As promised I am back on track with my blogs and here is the continued series of “What’s in my Gluten, Dairy and Preservative Free Pantry” ….please remember as you read these blogs that this is simply what ‘I’ buy….there are many more brand options around and the information I get is from the trusted Additive Free Pantry Guide and Chemical Maze Book (which are both now available through my website). 

“Tins”

Coconut Milk and Coconut Cream – I buy this Ayam brand (although NOT the lite ones) Coconut Milk is 82% Coconut Kernal Extract and water. Coconut Cream is 100% Coconut Kernal Extract. I use these both a fair bit in my cooking, in curries and desserts especially.

Mango and Coconut Ice Cream

Tuna – This one I grabbed from Aldi this week and it was far cheaper than other brands and it reads the same ingredients (Yes it is a product from Thailand) Tuna 64% Springwater 35.3% and salt. Tin Tuna is a MUST have ‘staple’ in my pantry. Have it on wraps or crackers with salad for lunch. The big girls mix it with home made mayo and pop it in a container with rice crackers separate for school lunch. Tuna Mornay (my easy ‘go to’ dinner) and lets not forget how scrumptious it is in a frittata!

Baked Beans – I buy these Coles Organic ones. They are only approximately 50c dearer than additive filled ones. I probably only use a tin a month but its good to have them there in the cupboard….especially is we are having a spicy dinner that  Master and Miss 2 won’t enjoy….Baked Beans with some grated carrot and zucchini through it is a winner for them (although trying to feed themselves….eeek what a MESS!)  Ingredients: Organic Navy Beans 45%, Organic Tomatoes 30%, Water, Organic Sugar, Organic Onion, Organic Sunflower oil, Organic Maize Starch, Salt, Organic Black Pepper, Acidity Regulator (300).

Spaghetti – NOT GLUTEN FREE – the same with the baked beans, not eaten often but a good one to have on hand for school lunch as a ‘woops’ forget to get groceries moment ;-)  
Ingredients: Spaghetti 43% (WHEAT FLOUR)  Organic Tomatoes 30%, Water, Organic Sugar, Organic Onion, Salt, Organic Sunflower oil, Organic Maize Starch,  Organic Spices, Organic Black Pepper, Acidity Regulator (300).

Chickpeas – Another”Staple” tin for my pantry. Oh so cheap and Oh so versatile. I buy these Coles Organic which Ingredients are: Chickpeas 60%, water and salt. I always give them a good rinse first and use them for SO many things….to snack on as is…all 4 kids would devour a tin easy….hommus….add to stir frys….add to curries….roasted chickpeas….throw into salads….
Not only are the yummy but they are super good for you as they are high in fibre and protein!

YUMMO! Homemade roasted chickpeas – recipe below!

ROASTED CHICKPEAS

1 can of chickpeas

Drain and rinse well

Preheat oven to 170oC

Line a tray with baking paper and spread chickpeas out over a single layer

Sprinkle with ½ tspn Paprika, ½ tspn Cumin, ¼ tspn Cayenne Pepper and ¼ tspn Salt

Mix gently

Cook in preheated oven for 40mins

Turn heat down to 110oC and cook for a further 5

Times may vary slightly depending on your oven – be careful not to burn

Chickpeas will get crunchier as they cool. Store in an airtight container (if they last that long!)

Thats it for tins in my cupboard…the only other thing I have on occasion (and only buy it when I need it) is tin fruit (eg pineapple) for cooking a cake or sweet and sour chicken etc.

Our Orange & Gubinge Chocolate Luvju is made with Raw Cacao. This means our chocolate has up to twice as many antioxidants as conventional chocolate. We’ve also used Organic Evaporated Coconut Nectar (a natural, low GI sweetener) instead of cane sugar to create this delightful and unique chocolate bar. Our raw dark chocolate has a nice clean snap, a smooth texture and a beautifully complex flavour. RECIPE! Chilli and Almond Chicken!

Good Afternoon! I hope this finds you all well and having a lovely week! I promise I will continue with my “whats in my pantry” blogs later this week that I know many of you have been enjoying…having not been 100% I am catching up on everything….blogs being one of the things! In the mean time this scrumptious recipe will hopefully make up for my absence! 

This meal was one of those dishes that was thrown together when I felt like cooking something ‘new’ for dinner (ok well it did have a bit of thought to it!) …. I had chicken out and a heap of fresh basil and chilli so this is what I created……… ENJOY!

chilli and almond chicken

4 single chicken breast fillets

1 large red capsicum

1 small red hot chilli

150g raw whole almonds

1 large bunch basil

¼ cup sunflower oil

1 tblspn rice wine vinegar

pinch salt

1 ½ cups brown rice

100g flaked almonds – toasted

½ bunch flat leaf parsley – roughly shredded

1 bunch broccolini 

Cut chicken breast fillets in half width ways and place in a large bowl.

Place the red capsicum, chilli, whole almonds, basil, sunflower oil, rice wine vinegar and salt into a food processor and combine well to form a paste.

Remove 3tblspns of this paste and set aside for the rice salad. Add the remaining paste to the chicken and mix thoroughly. Allow to marinate for 2-3 hours or overnight if time allows.

Once the chicken is marinated, preheat oven to 180c.

Cook the brown rice, drain well and place into a large bowl. Add the toasted almonds and flat leaf parsley to the rice and the 3 tblspns of reserved red capsicum paste. Mix thoroughly.

Line a large baking tray with non stick paper and place the chicken on the tray on an even layer. Bake in the preheated oven for 20 minutes either side or until chicken is thoroughly cooked.

Steam the broccolini.

To serve: place even amounts of the brown rice salad on individual serving plates. Top with 2 pieces of chicken and a serve of broccolini on the side.  

Serve immediately. 

SERVES 4

I hope you enjoy this meal as much as my family did….(and hubby loved the leftovers on wraps the next day for lunch!)

feeling lost....(it doesn't often happen!)

10 years ago I was diagnosed with serve food intolerance’s – tested by elimination diets, blood tests, skin prick tests and kinesiology. All providing the same results. 

I was told I was intolerant to (and therefore shouldn’t eat any of) WHEAT AND GLUTEN (I am coeliac) DAIRY, SOY, CORN, TOMATO, MUSHROOMS, PEAS, EGGS, NUTS, ALL BERRIES, ALL MELONS, GRAPES, BANANAS, PORK, ALL PRESERVATIVES / ADDITIVES / FLAVOURS (basically anything with a number) AND AMINES AND SALICYLATES. 

Could you imagine being able to eat anything and everything (or so you thought) and then hearing this? There is no ‘magic pill’ (as a person once asked me!) My only option was to not eat this food – as the pain of the ‘bowel attacks’ of what happened when I did eat it was seriously not worth it (yes I have had 4 children naturally and the pain is comparable to that with HOURS on the loo and passing out).

I decided to do a little elimination diet myself to find out ‘how much’ of this food listed above I could eat….and this is what I came up with and have stuck to for 8-10 years.

I DO NOT EAT (EVEN ONE BITE OF) WHEAT, GLUTEN, DAIRY, SOY, TOMATO, MUSHROOMS, PEAS, CORN, ALL BERRIES, ALL MELONS, GRAPES, BANANAS, PORK, ALL PRESERVATIVES /ADDITIVES / FLAVOURS. 

I found that I could eat IN MODERATION eggs, nuts, coconut, salmon, lentils, sesame seeds, garlic, olives, mango, pineapple, avocado. (e.g. only 1-2 servings of ONE of these things per week) 

From here I was doing well. I was healthy, had energy, maintained a healthy weight and created my 2 gorgeous recipe books “Cut out the Crap” and “Cut out the Crap for Kids” ….. until recently. 

I started noticing that these ‘sometimes foods’ were starting to react with me more and more, over a 6 week period I made a food diary and paid attention to common themes and how I was feeling. I was running to the loo a lot more, cramps in my stomach daily, migraines every other day and not too keen to leave the house. I felt like I had turned back time to 10 years ago when ‘food’ was doing my head in and getting me down….with a history of depression which I will NOT let beat me,  I didn’t want to go back to that place.
I am proud to say that I am VERY aware of my body and when I realised that something major was going on I needed to do something about it straight away. My business is full-time work which I still run on my own and also having 4 children I NEED to be healthy!!!!!   

I am not one for self diagnosing and then not getting confirmation /proof from a Dr….so as much as I thought I knew what I needed to avoid, I also needed it confirmed. I LOVE food and the last thing I want to do it cut out something nutritional that I actually could be eating and enjoying! I started doing research on more intolerance / allergy testing and have an appointment with my allergist from years ago (not for a few months) . 
I also decided after talking to a few friends who have had successes that I would get an IgG 93 test done …..blood tests that tested for 93 different food types. It cost me $410 dollars and I am not sure if I should be happy or disappointed with the results. I was hoping to have it show something in relation to these ‘sometimes’ foods….but it didn’t….it confirmed the MAJOR things I already knew and then also told me a MAJOR intolerance was ‘Kidney Beans’ ….. did I just spent $410 to find out I am allergic to Kidney Beans? I think so. 

So I feel I am back to square one. What do I do about this list of ‘sometimes’ foods that I know upsets my stomach with cramps and loo trips. Its not normal. Do I avoid them? Do I continue to have them at times? 

To top it all off, only last week (Easter Saturday) I spent the day in hospital drugged up on Morphine with SEVERE chest, rib and stomach pains and after a week of tests, tests and more tests it seems I have too many ‘acids’ in my gut as well as Gastritis (inflammation of the lining of the stomach) which it seems to be bought on by and caused by too much Nurofen …. which if we back track….I was taking for those 6 or so weeks when my food intolerance’s were at their worst….eeek….it seems its one big vicious circle!

Now I need to find out ALSO a way that I can get off the horrid chemical medication I am on and control this more naturally!

Please forgive me… I am not always a ‘poor me’ person and this is certainly not how I want this post to be perceived. I have SO many things that I am grateful for and thank God for daily. I know that there are people worse off out there than me, and for them I pray also. I guess its just not often I feel ‘lost’ with where to go next with my health…. in the past I have seen so many specialists and people that claim they can ‘heal’ me and it has only resulted in a waste of time, money, disappointment and another ‘bowel attack’.  I am hoping that by sharing my story 1) you might have something to help me – advice, kind words, direction, research and 2) I may help you and have you know you are not alone. 

I am taking medication which I hate doing, I am eating a bland diet which is boring (especially when I am in the middle of cooking for CUT OUT THE CRAP 3) and I am missing my daily juices and fruit!!!!!!

I have had a beautiful and overwhelming response of people offering advice with my health issues with the little they have read on Facebook, which I am looking into each and every one and seeing if I find something that ‘clicks’ …..  My ‘gut’ (pardon the pun) is telling me to go back to my Naturopath that I have been seeing on and off for years whom I trust, she deals in alternate medicine and Chinese medicine and I am sure (if not the whole problem) that she can at least help with the acid issue and gastritis…..as for the other food intolerances….at the moment I have no idea!!!!!!!

I guess I will take it one day at a time as always and do my best to turn these experiences into something to learn from and hopefully help others along the way.

Spaghetti Slice....

Good Morning! I hope this finds you all well. 

There are times when we have bits’n'pieces left over in the fridge which I hate to waste …. I always try to create something with them, make a frittata with them or place them on wraps for lunch ….this is something I threw together last week for the kids for dinner and they devoured it, thought you might like it too….

Spaghetti Slice!

In a medium fry pan place 5 button mushrooms diced, 1 carrot grated, 1/3 cup frozen peas and corn, 1 heaped tspn Vital Veggie Powder and  stir fry over a medium heat for 2 minutes. 

photo-1 copy 2 Add approximately 1 cup of leftover Rice Spaghetti chopped roughly and mix well.

Add 4 eggs

Mix well – still over a medium heat

Once it is mixed do not stir and cook until 3/4 cooked.

Turn on the grill – to high – and place slice cheese on top (if diet allows) and grill for 4 minutes until golden! Still do this process even if you don’t put the cheese on top.

Allow to cool and cut into slices – serve with a large salad. 

My 4 children loved this,  I was happy  as it used up all my leftovers AND it was good for them! Win Win! You could easily use any vegetables leftover and any pasta. Perfect for lunch boxes also!
