Good afternoon! I hope this blog finds you all well and having a wonderful start to the New Year! I wanted to share with you today our Christmas Day celebrations, what we ate ALL day as well as a gorgeous breakfast idea and a salad recipe perfect for Summer BBQ’s….
Our “White” Christmas
Breakfast: In our house we are huge fans of a big nutritional breakfast. We use to do a lot of socialising at breakfast time, especially on weekends with friends but since all of my food allergies came about the breakfasts stopped as they consisted mostly of bacon, sausages, tomatoes and mushrooms on the BBQ….all of which I can not have! It was my aim this Christmas to create something utterly scrumptious that we could enjoy for breakfast on special occasions and I am thrilled to say that I did it!
Our Christmas Breakfast
Step 1 – a decent bed of baby spinach
Step 2 – freshly cooked potato rosti - RECIPE IN CUT OUT THE CRAP FOR KIDS (I cooked mine earlier in the morning and kept them warm on a really low heat in the oven)
Step 3 – a soft poached egg (something so simple which I have never done before, all instructions say to use vinegar but I used rice wine vinegar)
Step 4 – a beautiful piece of smoked salmon (yummmmm!)
Step 5 and lastly- a generous serve of lemon and dill mayonaisse on top - RECIPE IN CUT OUT THE CRAP
My mouth is watering as I write this, it truly was delicious and even Miss 10 and Miss 8 loved it!
Lunch: We waited to eat lunch until around 3pm, as it was only the 6 of us this year and we had breakfast pretty late, we wanted to wait and have lunch when the twins woke from their day sleep. Josh has perfected cooking our whole Turkey on the BBQ (with a hood) and it was juicy and tender as always. With that I had 2kg of fresh Prawns and 3 salads! If you know me, it’s not surprising that I had SO much food! We had leftovers not only for dinner, but for lunch and dinner on Boxing Day also!
This is a gorgeous little Summer Salad I threw together also…I love texture in food and the crunch of the mung beans and almonds worked brilliantly and then everynow and then a little ‘pop’ of sweetness with pomegranate!
Pomegranate Salad
Seeds from 1 pomegranate
100g snow pea sprouts
200g “crunchy combo” (eg mung beans, lentils)
100g toasted slivered almonds
2 tblspns agave nectar
2 tblspns fresh lime juice
Add all ingredients into a large bowl and mix thoroughly.
