Our "White" Christmas

Good afternoon! I hope this blog finds you all well and having a wonderful start to the New Year! I wanted to share with you today our Christmas Day celebrations, what we ate ALL day as well as a gorgeous breakfast idea and a salad recipe perfect for Summer BBQ’s….

Our “White” Christmas

I love Christmas morning chaos! Santa spoilt the 4 children with new bikes!

Breakfast: In our house we are huge fans of a big nutritional breakfast. We use to do a lot of socialising at breakfast time, especially on weekends with friends but since all of my food allergies came about the breakfasts stopped as they consisted mostly of bacon, sausages, tomatoes and mushrooms on the BBQ….all of which I can not have! It was my aim this Christmas to create something utterly scrumptious that we could enjoy for breakfast on special occasions and I am thrilled to say that I did it!

Our Christmas Breakfast

Our Christmas Breakfast

Step 1 – a decent bed of baby spinach

Step 2 – freshly cooked potato rosti -  RECIPE IN CUT OUT THE CRAP FOR KIDS (I cooked mine earlier in the morning and kept them warm on a really low heat in the oven)

Step 3 – a soft poached egg (something so simple which I have never done before, all instructions say to use vinegar but I used rice wine vinegar)

Step 4 – a beautiful piece of smoked salmon (yummmmm!)

Step 5 and lastly- a generous serve of lemon and dill mayonaisse on top  - RECIPE IN CUT OUT THE CRAP

My mouth is watering as I write this, it truly was delicious and even Miss 10 and Miss 8 loved it!

My breakfast cut open…..how good does that look!

Some fresh seasonal fruit on the Christmas table for breakfast also with some homemade juice!

Lunch: We waited to eat lunch until around 3pm, as it was only the 6 of us this year and we had breakfast pretty late, we wanted to wait and have lunch when the twins woke from their day sleep. Josh has perfected cooking our whole Turkey on the BBQ (with a hood) and it was juicy and tender as always. With that I had 2kg of fresh Prawns and 3 salads! If you know me, it’s not surprising that I had SO much food! We had leftovers not only for dinner, but for lunch and dinner on Boxing Day also!

Josh and his BBQ cooked Glazed Christmas Turkey!

We cook the Glazed Turkey every year on the BBQ to save having the oven on and heating up the house….and it always cooked perfectly this way!

2kg of Prawns! They were Aussie, fresh and super tasty!

Roast Veg salad – RECIPE IN COTC

I LOVE fresh beetroot but hate how it stains your hands and chopping board, so this is my tip! Lay baking paper on the board and use disposable gloves!

Potato Salad RECIPE IN COTC – Hubbys favourite by far!

This is a gorgeous little Summer Salad I threw together also…I love texture in food and the crunch of the mung beans and almonds worked brilliantly and then everynow and then a little ‘pop’ of sweetness with pomegranate!

Pomegranate Salad

Pomegranate Salad

Seeds from 1 pomegranate

100g snow pea sprouts

200g “crunchy combo” (eg mung beans, lentils)

100g toasted slivered almonds

2 tblspns agave nectar

2 tblspns fresh lime juice

Add all ingredients into a large bowl and mix thoroughly.

Our table, getting ready for lunch…..

Turkey carved and ready to go….how great does it look!

Doesn’t he look happy! Who wouldn’t be with that much food!?

Me with Miss 8 and our Christmas hats!

I had planned on making ‘fig and macadamia balls’ for ‘sweets’ – but never got around to it as we really were too full…..here is the recipe if you have missed it before….. http://www.cutoutthecrap.com.au/3-free-recipes-be-warned-they-are-additctive/
