FREE RECIPE.... Veal Salad

Good Afternoon! Happy Friday! I love nothing more in this hot weather than creating scrumptious salads for lunch or dinner…. hubby cooks the meat on the bbq with a well deserved beer in his hand after a long day at work and I prepare the rest of the ingredients inside….throw them together and we are eating a healthy, tasty and satisfying dinner…here is one I made this week and thought you would enjoy it….we sure did!

500g pumpkin – cut approx 3cm x 2cm and roasted

1 bunch kale – make chips (recipe below)

1 continental cucumber – sliced into 1cm pieces

80g pine nuts – toasted

2 x red capsicum – cut into quarters

400g veal rump medallions

1 tspn cumin

1 tspn paprika

½ tspn coriander

½ tspn herbamare (if you don’t use this, replace it with ¼ tspn salt)

¼ tspn cayenne pepper

Roast the pumpkin, make the kale chips, cut the cucumber and toast the pine nuts and set aside (I did this in the morning when the twins were asleep).

Place veal medallions onto a place (or baking paper) and sprinkle with cumin, paprika, coriander, herbamare and cayenne pepper. Rub these spices well into the veal to coat it all over.

Cook the red capsicum on a hot BBQ until blistering and chargrilled. Cook the veal on a hot BBQ until cooked to your liking.

To serve: slice veal into 1cm diagonal pieces and combine with all other salad ingredients.

** Kale chips recipe:

1 large bunch of kale – trimmed into 2-3cm pieces

drizzle of oil

good pinch of herbamare (or salt and pepper)

Preheat oven to 180c.

Toss the Kale in the oil and seasoning and lay on a single layer on a non stick baking tray.

Bake for 15-20 minutes (depending on your oven) or until crispy! (be careful not to burn them)

As we now feed 2 adults, Miss 10, Miss 8 and 2 x 2 year olds we also cooked 1 single chicken breast fillet to put through the kids dinners (so they had a little lamb and chicken) There was enough salad ingredients for us all and we all fought over who got to eat and enjoy the crumbs of the kale chips and those burnt bits of pumpkin as always!
